Crushed biscuits, our new The Lady Shake Chocolate Mousse and meringue…. This no-bake s’more is all things delicious! The perfect dessert at only 322 calories.
Ingredients
- 2 sugar-free digestive biscuits (no chocolate)
- 1 serve of The Lady Shake Chocolate Mousse
- 2 egg whites
- 1 tsp of caster sugar
- ¼ cup of water
Method
Mousse & Biscuit
- On a chopping board, cut up your digestive biscuits with a knife. Once broken, crush with the flat side of the knife.
- Add the biscuits to a glass and flatten with your fingers. You want them to be flat and without any gaps to create a biscuit base.
- In a bowl, add 2 scoops of The Lady Shake Chocolate Mousse powder, along with 120ml of cold water.
- Whisk together for 1-2 minutes, or until creamy and smooth.
- Add your mousse to your glass with the biscuit base, ensuring that the mousse spreads evenly.
- Place your glass with mousse and biscuit into the fridge to allow to set.
Meringue
- Place a saucepan on the stove with water, and bring to a simmer.
- In a heat-proof bowl, separate your two eggs, adding the whites to the bowl.
- Add your caster sugar and ¼ cup of water to the same bowl, and whisk thoroughly.
- Place your bowl on top of the saucepan once the water is simmering (ensure no water goes into the mixture).
- With an electric mixer (or fork), beat thoroughly until stiff peaks form.
- Remove your mousse from the fridge and add your meringue to the top.
- If you have the patience, place it back in the fridge for 1-2 hours, or if you can’t wait, eat immediately!
