Ingredients
- 1 small red capsicum, chopped
- 1 small green capsicum chopped
- 1 brown onion, thinly sliced
- 3 garlic cloves, crushed
- 1 carrot, cut into matchsticks
- 1 bunch broccolini
- 1/2 wombok, thickly shredded
- 1 tbsp finely chopped fresh ginger
- 500g lean beef mince
- 1 packet of Asian egg noodles
Sauce Ingredients:
- 60ml (1/4 cup) oyster sauce
- 1 tbsp light soy sauce
- 2 tbsp Chinese cooking wine
- 2 tbsp warm water
Method
- Preheat oven to 180 degrees.
- In a tray, place your red and green capsicums, carrot, onion, beef mince, garlic and ginger.
- Bake for 10 minutes on fan bake.
- Remove from over, mix and bake for a further 10 minutes.
- Meanwhile, boil the kettle. Place noodles and broccolini in a heat proof bowl and cover with boiling water.
- To make the sauce, mix all of the sauce ingredients together in a bowl.
- When the beef mince and veggies are cooked, remove from the oven and place in a large frying pan along with the sauce, noodles and wombok. Mmix together.
- Cook until wombok is soft. Serve and enjoy!
