Beef, Pumpkin and Halloumi Salad

This delicious beef and halloumi salad recipe with pumpkin has over 30 grams of protein and will keep you filled up. It'll also make a great healthy addition to a picnic or BBQ which everyone will enjoy!

Ingredients

  • 100g lean beef strips or piece of lean steak, cut into strips
  • 30g haloumi 
  • 100g pumpkin, cut into cubes 
  • 1 tbsp balsamic glaze 
  • 1 cup baby spinach 
  • 1/2 red capsicum, finely chopped  
  • 1/4 red onion, finely sliced 
  • 1/2 cucumber, sliced

Method

  1. Preheat oven to 180 degrees. Line a baking tray with baking paper.
  2. Place pumpkin on the tray and cook for 30 minutes or until roasted and golden.
  3. Meanwhile, heat a non-stick pan over medium to high heat and cook the beef until cooked to your liking.
  4. Set aside, and in the same pan fry the halloumi until golden on both sides.
  5. Assemble salad ingredients together, add the beef and halloumi and top with the balsamic glaze.
