No Bake S’more Dessert with The Lady Shake Mousse

Method

Mousse & Biscuit

  1. On a chopping board, cut up your digestive biscuits with a knife. Once broken, crush with the flat side of the knife.
  2. Add the biscuits to a glass and flatten with your fingers. You want them to be flat and without any gaps to create a biscuit base.
  3. In a bowl, add 2 scoops of The Lady Shake Chocolate Mousse powder, along with 120ml of cold water.
  4. Whisk together for 1-2 minutes, or until creamy and smooth.
  5. Add your mousse to your glass with the biscuit base, ensuring that the mousse spreads evenly.
  6. Place your glass with mousse and biscuit into the fridge to allow to set.

Meringue

  1. Place a saucepan on the stove with water, and bring to a simmer.
  2. In a heat-proof bowl, separate your two eggs, adding the whites to the bowl.
  3. Add your caster sugar and ¼ cup of water to the same bowl, and whisk thoroughly.
  4. Place your bowl on top of the saucepan once the water is simmering (ensure no water goes into the mixture).
  5. With an electric mixer (or fork), beat thoroughly until stiff peaks form.
  6. Remove your mousse from the fridge and add your meringue to the top.
  7. If you have the patience, place it back in the fridge for 1-2 hours, or if you can’t wait, eat immediately!
