
Diced Summer Salad

Ingredients
Salad
- 15 grape tomatoes
- 100g purple cabbage
- 100g baby spinach
- 2 tbsp diced Spanish onion
- 1 large yellow capsicum
- ½ cup cooked and shelled edamame beans
- 30g baby bocconcini
Dressing
- ¼ cup extra light olive oil
- ¼ cup white vinegar
- 2 tsp dijon mustard
- Salt and pepper
Method
- Dice all salad ingredients and layer into a bowl.
- Combine dressing ingredients in small container with lid and shake well to combine.
- Dress salad and serve!
