Breakfast Burrito

Ingredients

  • A handful of baby spinach leaves, chopped (or 2 cubes of frozen spinach)
  • 2 eggs  
  • 2 egg whites
  • 1 whole grain tortilla or wrap
  • 1 sliced light cheese
  • ¼ avocado, sliced
  • 2 tbsp of salsa

Method

  1. Heat up a non-stick frying pan and spray with cooking oil.
  2. Chuck in the spinach and cook, stirring, until wilted – about 2 minutes.
  3. Whisk together the eggs and egg white in a small bowl. Add the egg mix to the pan and stir until cooked through (this will take about 3–4 minutes).
  4. Place the egg mixture in the centre of your burrito and sprinkle with cheese.
  5. Top with avocado, salsa and fold burrito-style.
