Passionfruit Mug Cake

Ingredients

  • 2 scoops of The Lady Shake Passionfruit Ice Cream  

  • 1 egg yolk 

  • ½ tsp baking powder 

  • 1 ½ tbsp unsalted butter  

  • 2 tsp passionfruit pulp  

  • 1 tsp coconut oil  

  • 1 tbsp Greek yoghurt 

Method

Place your butter in a mug and melt in the microwave for 15 seconds.

Add in your Lady Shake Passionfruit Ice Cream powder, egg yolk, baking powder and coconut oil. Mix well with a fork until combined.

Microwave for 2 minutes or until the top of the mug cake is firm. Using a skewer or a knife, insert into the mug cake. If it comes out clean, set your mug cake to the side to cool. If it comes out with mixture on it, microwave in 10 second bursts until cooked.

Once your mug cake is cool, add your passionfruit pulp and Greek yoghurt on top. Enjoy!
